I know…who needs another avocado toast recipe? 😉 A few years ago, I tried avocado toast at Clean Juice that used grated boiled eggs. It was delicious! I love the fluffy texture, so I created my own version at home.
A recipe developer and food photographer I am not. Below is more of a recipe outline without measurements for the spices. You won’t need much, just a few dashes. Adjust it to your liking!
Boiled eggs are best cooked in advance to give them time to cool completely before grating. It’s not a requirement, but makes it easier to grate the next day.
To increase the amount of protein, I always add additional eggs and/or breakfast sausage on the side.
Ingredients
Two servings
2 slices of sourdough bread
1 avocado
½ lemon
2 eggs
Dash of all of the following seasonings
granulated garlic
granulated onion
dried opinion flakes
black pepper
red pepper
salt
everything bagel seasoning
Instructions
Eggs
Bring pot of water to a rolling boil
Lower eggs in and boil for 10 minutes
After this time, remove from pot add the eggs to a bowl of ice cold water and refrigerate overnight
After they have chilled over night, peel eggs and use a box grater to grate the whole egg
For a slightly jammy, soft boiled egg, reduce the boil time to 8 minutes. This will not work for grating the eggs, but if you want to skip that step and slice the egg on top of the toast, this cook time is just fine.
Avocado
Dice avocado and lightly mash
Juice ½ lemon into avocado and mix well
Mix with seasonings (except everything bagel seasoning)
Bring it together
Place avocado on toast and top with grated eggs. Sprinkle everything bagel seasoning on top. Enjoy!
